Finding Peace


It’s been several weeks since I posted, but what better way to return. During these COVID19 times, I am working to maintain some balance and self love is required.

Chocolate Friands


Whether you’re counting your winnings or regretting that last bet, a chocolate friand will heighten the mood – or soften the blow. These are vegan as well!!


175g butter

200g dark chocolate buttons

6 egg whites

30g of cocoa

125g almond meal

250g icing sugar, sifted

80g plain flour


Preheat oven to 190C. Grease 12 friand moulds.

1. Melt butter and 100g of chocolate. Lightly whisk egg whites. Add melted chocolate and butter and stir. Add almond meal and icing sugar and combine. Add remaining chocolate, flour and cocoa and mix well.

2. Spoon into moulds. Bake for 25 minutes or until cooked through. Rest for five minutes before turning onto a cooling rack.

Mindful imageEvery day we have so many things to do and so many tasks and goals to complete that it can be difficult to be mindful, to be aware of what we are doing and how we are doing it, to be present and awake, to attend to our own existence, to let ourselves be enveloped by the here, by the now, by the moment we are living in, which is the most valuable thing we can ever have. But being mindful is essential to reaching the depths of who we are.

Some Days Are Just Special


Even for myself, a woman whose half full glass manages to somehow overflow, even by those standards, this was a great week. Thursday, May 28th was amazing for a couple of reasons: 1) My work to provide better access to quality health care for some people considered part of this country’s underserved populations was realized. 2) The quest to bring more value-adds in health care services for our New Mexico market/plan was a slam dunk!!
